New Moon Jack Mackerel Patties by Cindy (@Dressacake)
1 canned New Moon Jack Mackerel in tomato sauce
2 eggs (65g)
50g of grated Mozzarella cheese
50g of grated Cheddar cheese
50g of breadcrumbs
1/2 yellow onion (chopped)
2 tbsp of mayonnaise
2 tbsp of mustard
2 tbsp of spring onion (chopped)
Oil for frying
1. Drain out the tomato sauce from the can. Debone Mackerel and flake the meat with a fork.
2. Add all the ingredients and mix well.
3. Shaped the mackerel patties into palm size.
4. Heat up enough oil in a frying pan.
5. Throw some breadcrumbs into the oil to test if the oil is ready for frying.
6. Slowly put the mackerel patties into the pan and fry for about 2 to 3 minutes on each side till golden brown.
7. Drain the oil on kitchen towel. Serve hot with rice or make into Mackerel burgers.
